I picture eating this dessert under string lights on the patio on a hot summer evening. Berry pizzas sound like just the right thing for a warm day (that is if you opt for grilling these on the BBQ rather than roasting in the oven). BUT, I am tempted to use mascarpone instead of ricotta to up the creaminess and increase the chance my toddler will enjoy this treat. I especially love the idea of getting kids involved in placing the berries on top!
